Need some new runners’ recipes? This wonderful recipe is best served over a serving of warmed black beans and wilted greens. This is a meal that will help you run faster because it’s packed with injury-healing nutrients and more than half of your Omega-3 fatty acids for the day.
- 2 tablespoons olive oil
- 4 four-ounce salmon fillets or steaks
- 1 ½ cups chopped flat-leaf parsley
- Zest of 1 orange and 1 lemon
- 4 cloves garlic, finely chopped
- Salt and pepper to taste
Combine parsley, orange and lemon zest plus garlic half an hour before cooking to let the flavor mix thoroughly. Use this mixture to rub and top salmon fillets, then turn and spread evenly on the other side. Put inside the chiller until they are ready to bake or grill on medium-high heat (450 degrees). Grill for 10 minutes for every inch of thickness. When fully cooked, the fish should flake with a fork.
